Sunday Salad

Can you stand another 'recipe'?


This salad was a throw-together for a vegetarian meal one night when Mike wanted a pork chop.  I cooked his meat, but it was just not what I was in the mood for.  The salad is some of the rice that I served to him and some of the corn.  I added about a cup of quinoa and a a half cup of garbanzo beans.  The dressing is just lemon juice and olive oil with salt and pepper.  There is some fresh basil thrown in.  If I had mint, I would have liked that in it.  I had it with roasted carrots.


DSCN2325Tasty and lots of good protein to fuel my walks.  Or bike rides.  My new bike should be ready early this coming week.


Quinoa is a seed with subtle flavor.  It mixes well with grains and I will throw leftovers of this concoction over a lettuce and tomato salad to add the protein.  Quinoa contains a very high quality protein, since it contains all eight essential amino acids.


Mike just gives it his pinched-nose look.   It is a good thing I do not mind cooking--what with having to make twice as many meals as most.

  2. Hum, Quinoa is a new to me item that I will see if I can find. That sounds like a nice lite meal and that is my favorite dressing.

  4. I know Quinoa is all the rage but I have not tried it yet. We tend to be meat and vegetable eaters.

  5. Have not tried Quinoa. I do like my meat dishes at least 4 times a week. But the other three I can be happy with almost anything...popcorn, bowl of cereal.

  6. I like Quinoa - True Food Kitchen (an Andrew Weil restaurant) makes salads using it. Yippee - a new bike - what color? Well - I'll wait for the picture. (But, I hope it's red.)

Life Goes On

There is nothing like a visit from the grand children to remind one that life goes on.  I spent Friday night at my daughter's and then brought the kids back home with me.  I did not get to see so much of them this past summer and it was a birthday gift to my daughter (who just turned 40!) to have a couple of days to herself. She probably spent them in her son's room playing Lego StarWars.  Dane tried to teach me how to play this video game--a hopeless task if ever there was one.  "Concentrate, Grandma!  You have to concentrate!"  I do have a hard time with sustained concentration lately, but in this case I had no clue what it was that needed concentration.  He finally took the controls away from me (thank-you!). Morning Coffee

As a rule, I drink two cups of coffee in the morning. Gone are the days when I drank coffee all day and even had a cup after dinner--and never decaf.  When I was a working mom, the sleep deprivation made it kind of necessary in order to function.  These days, if I had a cup of coffee after lunch, I would be awake all night. But I do like my morning coffee.  Now I mix regular and decaf.  I can't quite seem to kick caffeine entirely. Wednesday morning there was no milk, no white stuff of any kind.  Thursday morning my sone left a note on the coffee maker--carafe was cracked.  Desperate times! I was not able to find a replacement carafe.  At least I was not able to dedicate my entire day to finding one.  So I bought a Mr. Coffee--a little five cup one for around 15 dollars.  I was thinking that I never drink more than two cups so why not. What I forgot about is that the manufacturers of coffee makers definition of a cup is, at best, ha...
