Sandwiches

 I recently read somewhere that tuna topped with potato chips has become a popular sandwich. Don has apparently been making such sandwiches for years.



I've never tried one. Chips on the side are fine with me.

Another sandwich Don makes that I'd never had but have come enjoy is tuna, egg and onion. I prefer my sandwiches to be open-face or else using Arnold's sandwich thins. This combination works well for open-faced. And canned tuna, eggs and onions are pantry staples.

We both love BLTs although we don't have them often. A BLT and an ear of fresh corn, buttered and salted, always seems like the quintessential summer supper to me -- something to be savored like the annual Christmas feast.

A grilled cheese and tomato soup says fall. I guess I need to work on a winter and a spring sandwich!

Today my lunch was yogurt and blueberries and right now I need to get busy making my oatmeal muffins that are my most usual breakfast with a cup of coffee.

I must be hungry right now!

  1. I must have chips with a tuna sandwich, but on the side, please. I am not a tomato soup fan, so I go for split pea with my grilled cheese. I agree, BLTs are fresh tomato season food.

  3. You're making me hungry with your post even though I just finished my breakfast bagel with peanut butter.
    I've never tried potato chips on a sandwich, though have heard of it. Tuna, egg and onion seem an odd combination - but I like both tuna sandwiches and egg salad sandwiches so it might be worth a try. Something I enjoy as a treat that I've learned seems odd to most people, is salmon salad on toast. But the weirdest combination I know of, is brown sugar and onion which my mom made for herself on occasion. I'm thinking it was something her family ate when there was little else in the house to eat during the depression but I never thought to ask her.

  4. We love BELT's... which are basically a BLT with a fried egg in the middle. One of our breakfast places makes these and they are so-oo good. And as for chips on a sandwich... I like chips on peanut butter and jelly too - the salt and sweet!

  5. This was certainly a tasty read! I can't say I'd enjoy chips in my sandwich, but I've long been a fan of tuna, chopped egg & onion on toast (with a little mayo). Also, thank you for the inspiration--I was at the market this morning, they had bacon on sale so I bought a pack (to separate the strips and freeze for breakfasts). But I believe I'll be having a BLT for my dinner tonight too. :^)

  7. I do remember eating tuna and potato chip sandwiches but I also like chip on the side. Hubby does not like sandwches except BLTs .

 On September 29, I had the closing on my condo. Everything that was not going to the buyers was out and packed in the ABF moving truck which had by the been taken over to the storage units. Don thought it would take him until Wednesday to finish packing the truck with the help of his son. It took him until late Thursday with Chris' help and mine. Kevin was supposed to help load as well but he was in a mountain bike accident and wrecked his shoulder the week before. That added driving him to doctor appointments to my to do list and dong some shopping for him plus jobs around the house that might need two functioning upper limbs.  We stayed with Kevin on Friday night after the closing and then had a suite in an extended stay place for the coming week. This was the worst possible time to have to get a room because the prices balloon during leaf peeping season if you can even find a room at all. Wedding

 Don and I drove to South Carolina to attend the wedding of my step-grandson, Will. Will Will and Katie The wedding took place on Dataw Island, a beautiful outdoor ceremony followed by a reception in the country club. We stayed in a tiny cottage in the historic center of Beaufort, rented from Vrbo. Since the wedding was at 5 p.m., we had time to explore the area a bit. I really like the low country scenery and historical charm. Sitting quietly in the curtained gazebo I was visited by multiple cardinals. They came to visit the feeder, not me, but I can always pretend! How I will always remember Will!

Rest In Peace

 In a summer that has been so wet, Sunday was a reprieve. The humidity dropped and the sun came out. It was a day that could have been special ordered by the family of a friend's husband. It was the day they had arranged his celebration of life ceremony set on the shore of Lake Champlain. I was not looking forward to the gathering, even couched as a celebration. This is a family fraught with relationship tensions. It turned out to be a beautiful day and a beautiful ceremony. A Catholic priest gave a brief but meaningful homily and two Air Force members played "Taps" and presented the American flag to my friend. I am not a Christian, but I do know about Christ Consciousness. That priest's word's filled me with such a sense of peace and love. I hope it did the same for the family members and neighbors who attended.
