What to do with a lot of summer squash when you cook for one person?
Make a big batch of Summer Squash Au Gratin.
My recipe was similar to the one from Taste of Home magazine that can be found here.
I used half and half because that is what I generally have on hand. Even in non-COVID times I would not run out for heavy cream unless there was some kind of strawberry shortcake emergency.
I used considerably less garlic and I added carrots just because I really like carrots.
I divided it into six smaller containers and froze three of them for future meals. I have had some for three days in a row now and I am not at all sick of it. I add a "salad" of celery and carrot sticks and I am a happy camper.

I've made a lasagna with summer squash before. I sliced the squash on my mandoline and use it like lasagna noodles. More like a veggie lasagna. carrots etc and a lite white sauce. I saw your post on summer squash so I went to look for the recipe and damn if its not in my recipe folder. I must call my mom because now I really want to make this now. Thanks Olga, now I'm obsessed.

ReplyDeleteOoh, that sounds really good. I do the same with big batches and like you, I don't get tired of the same dish for several meals in a row as long as it is tasty. I'm big on carrots too.
ReplyDeleteSounds good as long as I can leave out the garlic. It might be a possibility if we get a good crop of zucchini this year. We just planted the seeds yesterday.

DeleteI sure miss my husband's gardens and my neighbor's gardens. Our area won't have Farmer's Market this year. Sad:-(

DeleteAu gratin is the only way to eat squash or zucchini, imho. Looks good!
