Dinner

I invited my son Kevin for dinner Monday evening.  He and I both enjoy Indian food and I was toying with the idea of preparing Butter Chicken but then I changed my mind and decided to do Asian cuisine instead.

I swear, who ever does the cooking in moat of Asia must have no other jobs but that.  The chopping and chopping and chopping.  The actual cooking took very little time.  The preparation took me most of the afternoon. That doesn't count my trip to the grocery store in the morning.  I needed hoisin sauce, some red pepper flakes and an orange.  I picked up some gluten free soy sauce as well.

I made Vietnamese spring rolls with peanut sauce.  That involved picking basil from my garden pot, shredding carrots, cucumbers, green onion, washing lettuce leaves, and slicing shrimp.  Then there is the softening of the bean threads and the rice wrappers and putting them together.  I wrapped them individually in plastic wrap because I made then a couple hours ahead of time.



I also made chicken in an orange sauce. Korean steak with peppers and onion in a garlic sauce, steamed broccoli, and fried brown rice.  I sliced the last of fresh local strawberries for dessert.

Probably all those dishes do not add up to the calorie count of Buttered Chicken.  But it did involve a whole lot more chopping.

Labor intensive, but delicious and well received.

  5. Wow. Those spring rolls look fabulous. There really is a lot of work to prepare such dishes. I’d help you shop and chop if you cooked for me. I’m not that talented. I bet your son was very happy to eat such a wonderful meal, and I’m sure the company was wonderful as well.

  7. Wow, when are you opening your restaurant. I am impressed with the effort you put in and so glad it was appreciated. You obviously worked off all calories before you took your first bite. No wonder a lot of Asian people are thin.

Life Goes On

There is nothing like a visit from the grand children to remind one that life goes on.  I spent Friday night at my daughter's and then brought the kids back home with me.  I did not get to see so much of them this past summer and it was a birthday gift to my daughter (who just turned 40!) to have a couple of days to herself. She probably spent them in her son's room playing Lego StarWars.  Dane tried to teach me how to play this video game--a hopeless task if ever there was one.  "Concentrate, Grandma!  You have to concentrate!"  I do have a hard time with sustained concentration lately, but in this case I had no clue what it was that needed concentration.  He finally took the controls away from me (thank-you!). It's amazing how long he can amuse himself at my house being out side on a scooter or helping me in the yard, especially if it involves a hose.  Inside, they both sit and draw or craft for hours.  Just before bed, Dane did say, "N...

Eggplant

Mike and I considered ourselves soul mates, but we definitely were not culinary mates.  Mike liked what he liked and disliked what he disliked and he never changed his mind about things like that.  He did not eat mayonnaise.  He did not eat tomato sauce.  He did not eat cooked vegetables except for corn, peas and green beans.  He did not eat onions cooked or otherwise.  He did not eat casseroles ever since they were a combination of things he didn't eat anyway. I did not like mushrooms as a kid and eggplant just made me gag, but my tastes changed,  Foods I found disgusting as a child are now among my favorites--mushrooms, eggplant, avocados, asparagus, eggs, spinach, brussel sprouts, herbs and spices. I will admit that I never developed a taste for liver (nor do I want to).
