My neighbors brought over a bag of green beans and assorted summer squashes from their large vegetable garden this morning. That simplifies meal planning for the week. And lucky for me that they stopped by before I headed out to the grocery store.
I have a couple of casserole recipes for summer squash that I like.
My brother gave me blueberries. A loaf of zucchini/blueberry bread will go in the freezer.
I will have to freeze some of the green beans, but I do love fresh picked green beans--just don't know that I would eat them three meals a day for the rest of the week.
My mother made a creamy soup with green and yellow beans that I really liked. I will have to spend some time tracking down that recipe.
I love summer meals!

ReplyDeleteHow great is that! You have generous people around you. I should add more veggies to my diet, like you.
ReplyDeleteI am blessed with my neighbors.

ReplyDeleteNice neighbor and nice brother! Blueberries with zucchini. Yum. Hope you find the soup recipe.
ReplyDeleteGlad you're enjoying the bounty. We make frequent trips to market to get fresh produce. The tomatoes are wonderful! Enjoy the beans!
ReplyDeleteBetter than having a garden is having neighbors that have one. Nary a weed to pull but the good stuff keeps coming in. Enjoy that bounty.
ReplyDeleteSo true!
DeleteMmmmmm... I do love fresh green beans. I like them stir fried with a little teriyaki sauce too. I also love blueberries. You're so lucky. It all sounds heavenly.
ReplyDeleteI do love summer meals. And my neighbor is strictly organic and has been forever.
DeleteYou can wash, blanch and then freeze the beans in serving sizes for early in winter when you are craving that garden green taste again.
ReplyDeleteWhat a delight! I have failed with veggies this year!
