Kitchen Experiments

Perhaps you recall that I recently made a 'pizza' with a cauliflower crust.  I wouldn't call it a real substitute for pizza, but it was not a bad dish in its own right.

My latest cauliflower experiment was baked Buffalo cauliflower.  There are lots of recipes on the internet so I won't repeat one here--basically oven roasted cauliflower with Buffalo hot sauce.  It was really tasty though.  I eat less and less meat as time goes on.  I will definitely keep this recipe.  Maybe even sometime add chicken wings or shrimp to it.

I made a rice and lentil salad to go with it.  I cooked Jasmine rice and some lentils earlier in the day.  Then I added scallions, a seeded and chopped piece of cucumber, chopped parsley, fresh lemon juice, and some olive oil, salt and pepper.  Tomatoes might have been nice, and I may add some to the left over.  Fresh Florida lemon juice is so much better than the lemons that make their way to Vermont.  The lemons at the market today were very small and thin skinned compared to what I am used to at home, but the flavor was so much more bright.

Good thing I liked it because I will be eating that salad for the rest of the week.

Ooo...maybe I will get a bag of lemons and make some limoncello.

  1. Isn't it funny how our taste changes. Not necessarily that strange foods taste better, but that we are willing to try something strange to us and we give it an honest chance.

  3. Oh my, I wish I could see myself cooking if I ever live alone, unfortunately I don't. Good for you. I eat too much meat, especially beef. Lately I've been eating shrimp and salmon. You can leave the feathers on chickens for all I care.

  4. Florida fruit and veggies do taste fresher because in most cases there are picked local. I do like my meat, but really have cut back on red meat. I do love seafood and eat that at least once if not twice a week.

  5. I am eating much less meat now too. It just doesn't appeal to me as much anymore. I have not tried cauliflower crust, but I have heard of it.

  6. I can give up beef but have to have my eggs and cheese. Fresh cauliflower and broccoli are wonderful replacements for chips.

  8. You are eating so heart healthy. You go girl. Think you are inspiring me to get a bit more creative. Trying to be good I have gotten a bit boring. I have some black rice begging to be cooked. Thanks for the kick in the apron.

  9. I have that recipe for the cauliflower pizza crust, but haven't tried it yet. Need to do that soon. I do have a wonderful cauliflower and broccoli casserole that we love. (And we don't eat 'a lot' of red meat either - although I don't think DH would like it if I left it out completely)

  10. Cauliflower pizza sounds good. I wonder if I could sneak it by the teenager? I had some great salmon last night and our little one decided she loves corn!

  11. The salad sounds wonderful. Lemon juice does make a great low sodium salad dressing. Of course, I use the crap in the bottle, too lazy to mess with fresh lemons.

  12. I think it is wonderful how you take such good care of yourself. I'm not sure if I was living alone that I would do as good as you do. I think there would be lots of nights with cereal as the dinner entree!

  13. That is sounding very healthy. I haven't cooked much cauliflower in a long time. Limoncello? We have a lemon tree and always give a bunch to my cousin who says they make limoncello. I always wondered what it tasted like.

 On September 29, I had the closing on my condo. Everything that was not going to the buyers was out and packed in the ABF moving truck which had by the been taken over to the storage units. Don thought it would take him until Wednesday to finish packing the truck with the help of his son. It took him until late Thursday with Chris' help and mine. Kevin was supposed to help load as well but he was in a mountain bike accident and wrecked his shoulder the week before. That added driving him to doctor appointments to my to do list and dong some shopping for him plus jobs around the house that might need two functioning upper limbs.  We stayed with Kevin on Friday night after the closing and then had a suite in an extended stay place for the coming week. This was the worst possible time to have to get a room because the prices balloon during leaf peeping season if you can even find a room at all. Wedding

 Don and I drove to South Carolina to attend the wedding of my step-grandson, Will. Will Will and Katie The wedding took place on Dataw Island, a beautiful outdoor ceremony followed by a reception in the country club. We stayed in a tiny cottage in the historic center of Beaufort, rented from Vrbo. Since the wedding was at 5 p.m., we had time to explore the area a bit. I really like the low country scenery and historical charm. Sitting quietly in the curtained gazebo I was visited by multiple cardinals. They came to visit the feeder, not me, but I can always pretend! How I will always remember Will!

Rest In Peace

 In a summer that has been so wet, Sunday was a reprieve. The humidity dropped and the sun came out. It was a day that could have been special ordered by the family of a friend's husband. It was the day they had arranged his celebration of life ceremony set on the shore of Lake Champlain. I was not looking forward to the gathering, even couched as a celebration. This is a family fraught with relationship tensions. It turned out to be a beautiful day and a beautiful ceremony. A Catholic priest gave a brief but meaningful homily and two Air Force members played "Taps" and presented the American flag to my friend. I am not a Christian, but I do know about Christ Consciousness. That priest's word's filled me with such a sense of peace and love. I hope it did the same for the family members and neighbors who attended.
