Cooking for One

My mother used to fight with me as a child to get me to eat eggs.  Scrambled, could choke them down, but in any other form--as in a yellow ball surrounded by whiteness--forget it.  Even worse if the yellow was jiggly and the white was runny.  Instant gag reflex.

Now that I am a mature adult, I have made peace with eggs.  I have even found that eggs are just a wonderful foodstuff in my life of cooking for one.

In all honesty, I still do not care all that much about facing an egg first thing in the morning, but I do prepare them for a simple supper or an easy lunch.
This homemade fried brown rice with vegetables became a complete meal with the protein supplied by a topping of fried egg.

It is no secret.  I really love avocados.  Really, really love avocados.  Avocados marry well with eggs.

I like to mash a really ripe avocado with a little olive oil or some juice from the olive jar, salt, and pepper.  Stir some chopped hard boiled egg into this and it is great sandwich spread with no mayonnaise.

Just a plain egg over sliced avocado is pretty yummy.  I also love some avocado chunks stirred into scrambled eggs just before they set.

Avocados are a source of dietary fat, but it is the monounsaturated kind that is heart healthy and helps maintain a beneficial ratio of cholesterol.  For a fruit, it is relatively low in sugar and high in protein.  It is a good source of fiber and potassium.  It is a source of Vitamins K, C, E, and several of the Bs as well as other phytochemicals that may help the body fight cancer cell development.

And if you are super patient, you can sometimes get a plant started from the big seed in its center. (Or so I am told.)

  3. I cannot believe your perfect timing for this post. Of course I eat eggs because there is an abundance of them around here. Free range chicken eggs are low in cholesterol and high in omega 3. I was wondering how avocados would be with eggs because they are a good source of potassium and I am sick to looking only to bananas to provide that. Spinach is also but I would much prefer avocados. Thanks for the wonderful answer to my question:) Now if only avocados were as inexpensive for me as the eggs.

  4. I like omelets and hard boiled eggs in potato salad. Not too fond of fried eggs, though. I like the avocado in quacomole.

  5. We eat a lot of eggs, my adult children and I. Often they are part of a meal for one, as we work such different schedule. They learned to scramble eggs by the time they were five (though I broke the eggs for them).

    I've never tried egg with avocado, but I like both so it's certainly something I'd like to try. Thanks for sharing!

  6. I love avocados and hate eggs, but I might try them together. I can not gag down an egg unless it is scrambled. I have only started eating a scrambled egg and toast sandwich for my evening meal since I have been an empty nester and purely because it is an easy one serving meal, and cheap.

  8. I am so glad to hear that you're cooking for yourself. So many in your situation don't, and that's a shame and not very healthy!! I love eggs and could eat them all the time.

    1. I am kind of used to cooking for myself since Mike did not really do the vegetable thing. He did like fruit though. He liked what he liked and did not eat what he did not like.

  11. I love my eggs fried or poached - scrambled are ok, but I like the others better. Looks good with avocado, but I'll never know, 'cause I'm allergic to them. I was once told by a nurse that if I'm allergic to avocados, I might also be allergic to latex. Strange, huh?

  12. I agree with your young assessment of eggs, and I have never made piece with them, although scrambled or in an omelet, I can eat them. The avocado is of great interest though. I don't believe I have ever eaten one. I must try it.

  13. I love avocados and they have been plentiful and inexpensive lately so I've been indulging a lot. I love making egg salad with chunks of avocado in it! Yum! I often joke that avocados are good on most everything but pancakes! Living in Michigan I never even had one until I was 13 and I am making up for all of the ones I missed.

 On September 29, I had the closing on my condo. Everything that was not going to the buyers was out and packed in the ABF moving truck which had by the been taken over to the storage units. Don thought it would take him until Wednesday to finish packing the truck with the help of his son. It took him until late Thursday with Chris' help and mine. Kevin was supposed to help load as well but he was in a mountain bike accident and wrecked his shoulder the week before. That added driving him to doctor appointments to my to do list and dong some shopping for him plus jobs around the house that might need two functioning upper limbs.  We stayed with Kevin on Friday night after the closing and then had a suite in an extended stay place for the coming week. Wedding

 Don and I drove to South Carolina to attend the wedding of my step-grandson, Will. Will Will and Katie The wedding took place on Dataw Island, a beautiful outdoor ceremony followed by a reception in the country club. We stayed in a tiny cottage in the historic center of Beaufort, rented from Vrbo. Since the wedding was at 5 p.m., we had time to explore the area a bit. I really like the low country scenery and historical charm. Sitting quietly in the curtained gazebo I was visited by multiple cardinals. They came to visit the feeder, not me, but I can always pretend! How I will always remember Will!

Rest In Peace

 In a summer that has been so wet, Sunday was a reprieve. The humidity dropped and the sun came out. It was a day that could have been special ordered by the family of a friend's husband. It was the day they had arranged his celebration of life ceremony set on the shore of Lake Champlain. I was not looking forward to the gathering, even couched as a celebration. This is a family fraught with relationship tensions. It turned out to be a beautiful day and a beautiful ceremony. A Catholic priest gave a brief but meaningful homily and two Air Force members played "Taps" and presented the American flag to my friend. I am not a Christian, but I do know about Christ Consciousness. That priest's word's filled me with such a sense of peace and love. I hope it did the same for the family members and neighbors who attended.
