Meatless Monday


At the neighbors' Christmas dinner, we were served a roasted beef filet that was absolutely delicious--fork tender and melt in your mouth heavenly.  I don't pretend to be a vegetarian.

However, that was the first red meat I have had in five months and I am pretty sure that it will be equally as long before I indulge again.

This is more my speed, especially now that I mostly cook for one--a sweet potato and chickpea curry.


I softened a cut up sweet potato and a sliced shallot in a bit hot coconut oil.  Added salt, pepper, a little minced ginger, a little curry powder, a small can of chickpeas, some chopped cauliflower, coconut milk, and just a tiny bit of red pepper flakes.  It did not take long for the potato and cauliflower to be tender.  A sprinkle of parsley, a cucumber salad--dinner!

  1. This sounds delish to me, Olga. I'm having some red meat tonight - Bob is grilling us a fillet - but like you, I rarely eat red meat. Hugs to you for 2014!

  4. I, too, enjoy meatless meals now and then. Last night, I had string beans, apples, and leftover ratatouille. I love fruits and veggies, so I can always pull something together.

  6. Meat can make us drool ;but that dish is exactly what I enjoy. Thanks, I will try to recreate it. Going more meatless is my goal for the coming year.

  7. I would eat dinner with you anytime! I joke that I could easily be a vegetarian if I didn't like meat so much! But I do love my veggies and I do love a good curry. That sounds and looks delicious! I love everything in your dish although i might add a dash more pepper flakes! Happy New Year Olga!

    1. Red meat doesn't appeal to me much anymore either and I would love the chickpea and sweet potato dish. Have you ever eaten any of Amy's organic frozen vegetarian dinners? They are the best if they are available in your area. Happy New Year my friend.

  9. I have a hard time getting enough protein without meat, though I have found that a hard-boiled egg in a salad usually does the trick.

  11. Join the [mostly meatless] club! Veggies, salads, pasta, soups, cereals. Never does red meat touch our lips . . . we do have fish and chicken though.

  12. Excellent, Olga. We're trying to stay away from too much meat. I don't think we're ready to go meatless, but we tend to eat more fish these days.
