Sunday Morning

Mike and I usually start our days with a couple of cups of coffee and toast or a muffin, but on Sunday mornings we like to fix a big breakfast and have a leisurely meal while reading the paper.

This morning I made the breakfast—pancakes with orange curd and blueberry sauce, bacon, and coffee.  We may not eat again until tomorrow.  (Would that were so!)

Blueberry sauce (it is that time of year here in New England):
In a small saucepan mix a cup of blueberries, 1/4 cup of orange curd, a pinch of salt, a teaspoon of corn starch, and a splash of orange juice.  Simmer gently until slightly thickened but not so much that the the berries break down.  Add a pat of butter and set aside.

The pancakes:
Combine in small bowl:
  • cup of all-purpose flour
  • 1 tsp. baking powder
  • pinch of salt
  • some grated orange rind
In a larger bowl, whisk together:
  • 1/2 cup plain Greek yogurt
  • 1 egg
Add dry ingredients, alternating with:
  • 3/4 to 1 cup of milk
Cook on a greased griddle.  This will make six pancakes.

To serve, spread additional orange curd on each pancake and top with the blueberry sauce.  A sprinkle of confectioners’ sugar or a dollop of whipped cream will make this quite impressive looking.

Really, you should separate the egg and just put the yolk in with the yogurt.  Then, you are supposed to beat the egg white and fold that in at the end.  I have made pancakes and waffles this way and they are very light and delicious, but at some point I always look around my small kitchen and think, “This is enough mess for this morning,” so I just put the whole egg in at once.  No body around here is fussy enough to complain.

We had tentatively planned to be in Rhode Island today, but the storms predicted put our plans on hold.  We will head out tomorrow if things look a little better.

  2. Your Sunday breakfast sounds great. We sometimes go out for Sunday breakfast, but occasionally I'll do scones or waffles at home... and I love pancakes with either pecans, chocolate chunks, blueberries or strawberries (or a combination)!

    We had overnight guests, so Tom made blueberry coffee cake this morning, a delicious change from our usual light fare.

 On September 29, I had the closing on my condo. Everything that was not going to the buyers was out and packed in the ABF moving truck which had by the been taken over to the storage units. Don thought it would take him until Wednesday to finish packing the truck with the help of his son. It took him until late Thursday with Chris' help and mine. Kevin was supposed to help load as well but he was in a mountain bike accident and wrecked his shoulder the week before. Wedding

 Don and I drove to South Carolina to attend the wedding of my step-grandson, Will. Will Will and Katie The wedding took place on Dataw Island, a beautiful outdoor ceremony followed by a reception in the country club. We stayed in a tiny cottage in the historic center of Beaufort, rented from Vrbo. Since the wedding was at 5 p.m., we had time to explore the area a bit. I really like the low country scenery and historical charm. Sitting quietly in the curtained gazebo I was visited by multiple cardinals. They came to visit the feeder, not me, but I can always pretend! How I will always remember Will!

Rest In Peace

 In a summer that has been so wet, Sunday was a reprieve. The humidity dropped and the sun came out. It was a day that could have been special ordered by the family of a friend's husband. It was the day they had arranged his celebration of life ceremony set on the shore of Lake Champlain. I was not looking forward to the gathering, even couched as a celebration. This is a family fraught with relationship tensions. It turned out to be a beautiful day and a beautiful ceremony. A Catholic priest gave a brief but meaningful homily and two Air Force members played "Taps" and presented the American flag to my friend. I am not a Christian, but I do know about Christ Consciousness. That priest's word's filled me with such a sense of peace and love. I hope it did the same for the family members and neighbors who attended.
